Sweet Potato "Fries"

Serves 2


(Preheat oven to 400 degreees F.)

2 large sweet potatos or yams
1 tbsp. olive oil
1 tsp. dried oregano
pinch of salt and pepper


1) Scrub potatoes until clean, slice lengthwise into medium-sized wedges, then cut wedges in half. Place wedges in a small bowl, then toss well with oil, oregano, and salt and pepper.

2) Bake the "fries" in the preheated 400 degree Fahrenheit oven for about 35 minutes, flipping halfway through baking.

To Serve:

Eat them as you would French fries -- piping hot, with loads of ketchup or vinegar.
